Legend of the Cù-Sìth

While deeply rooted in the Pacific Northwest, 3 Howls gained the inspiration for its name from the legend of the Cù-Sìth (pronounced "koo shee"). Translated from Gaelic as “Fairy Dog,” the Cù-Sìth is a giant spectral hound and harbinger of the underworld that roams the highland moors of Scotland. The hound is said to silently stalk its victims before rending the air with three blood-curdling howls that can be heard far out over the sea. Whoever hears the howling of the beast must reach a place of safety by the third howl or the Cù-Sìth will steal away their soul to the Underworld.

Much like this ancient beast, 3 Howls spirits resound with timeless depth and mystery. Our spirits feature ingredients foraged and harvested from the Pacific Northwest’s fields, orchards, forests, and coastal waters.

Founded in 2013, we at 3 Howls believe that exceptional ingredients, rigorous quality control and fearless creativity are the cornerstones of distillation craft. We lean into historically tried and true methods while at the same time pushing the boundaries of what is possible in the realm of sensory experience.

OUR PROCESS

Three Chamber Distillation

Our 1300 gallon 27 foot tall Three Chamber behemoth affectionately named Cù-Sìth is the newest addition to the 3 HOWLS arsenal. CU SITH is one of only a few operational 3-chamber stills in the world. 3-chamber stills are notoriously difficult to operate but they produce some of the most intense full-bodied and aromatic spirits on the planet, so we feel it's a worthy endeavor. We are currently using this still to create huge malt forward spirits as well as 100% molasses rums for aging and blending.

La Lupa is our Carl pot still, complete with gin basket and 26-plate column. She is currently used to create our gins and specialty vodkas. This still is also responsible for our limited release 12yr old sweet mash Bourbon which we believe is in a league of its own.

Roto Evaporation

50L Eco Dyst Cold still (roto-evaporator). This little feat of engineering is possibly the most important piece of equipment in the distillery. Post primary distillation, we cold distill our 14 ingredient base gin with the more delicate aromatic ingredients in our recipes: like Saffron, Lavender, and spruce tips to name a few. We believe that the finished product not only captures the essence of whatever is infused in the distillate, but also rounds, softens and marries the spirit into something wholly new and exceptional.
